People have forgotten the basics of cooking and why which ingredients are cooked together...
My go-to lunch at the moment is soup made with broccoli, spinach, red peppers and red lentils, onion, chillies, celery, garlic etc. Most would not realise just how rich in fibre, protein, vitamins, antioxidants and minerals a low-carb soup like that is. About £1 a portion... cheaper than chips!
Kidney bean curry and boiled eggs is another incredibly cheap but highly nutritious meal that is so easy to make with a little guidance and practice.
An ALDI opened close to me a couple of years ago - great shop for cheap seasonal veg. They should do an ALDI cooking channel on YouTube etc.
