I don't know who Stu Crow is, my failure, but I saw this and thought, spot on.

Locally if I go for a meal, a flllet steak costs say £25. They do not buy it for £1. to be able to sell it at all, they have to buy the steaks in the first place. Some restaurants also look for known quality of supply. Might start to see a bit of impetus returning to this market.
