I would reckon it's because the Oxford vaccine does not require to be held at -80, only at regular fridge temperature.
Makes it easy from a logistics point of view and for local storage.
In addition, because this is a London listed share, we weirdly react to UK based news and seeing as the UK has ordered more of the Oxford vaccine than any other, it will / should have an immediate impact on SP.

Regarding the virus mutating.
There was a Cambridge scientist on Radio 2 yesterday answering this very question.
To put it into layman's terms, now we have the main vaccine/s, adjusting to any mutation is a simple re-write of the code.
We do this with the annual flu jabs.
Every year, the flu mutates but it's an easy job to adjust the vaccine to compensate as the core product already does it's job.
And they do this every year for regular flu.
Think of it as an annual download patch to update a video game.
Covid vaccines will be no different.
We have the core vaccine. Mutations are no concern. We have this beat. It's just a matter of rolling it out.
And the 90% efficacy thing is actually amazing.
WHO demand vaccines to be at 50% . So to have vaccines at 90%+ is nuclear for this virus.
