I see that the board is it's usual wonderful self, full of incredible information.....

You can book a Non-Refundable rate, or a refundable rate, and then just before final payment date, re-calculate onto a non-refundable rate, which is lower to make the final payment.
That way, you don't actually lose anything.
As I've done well over hundred cruises, mostly within the US, that is exactly what I do all the time.
