Your right that supply and demand drive a share price but shares can rise or fall on even small volumes especially shares in smaller cap stocks which have less liquidity than than FTSE 250 and often driven heavily by market sentiment.
For instance if majority of holders believe that company is undervalued and hold on to shares new investors buying in will drive up price even on small volumes. The contrary is true if people are unenthusiastic about a share and don’t want to buy more, and then even a small number of sellers can drive price down until buyers can be found at new lower price by market makers.
One large buy order can be met via numerous small sells and vice versa.
