Poindexter10's reply is from a Hargreaves Lansdown email and, as such, is broker-specific and doesn't answer your question anyway.
I don't think there's any suspension in trading, so presumably you'll just be able to buy and sell on the day of the transition. When BBB did this (RoC) last year, the conversion to B shares was done at 08:00 and then redeemed for cash just seconds later. Trading then continued at the new share price, 45p lower in that example. (As an aside, though, that share price has tanked since the RoC.)
The actual proceeds from the Aviva RoC, however, won't be paid until later ("It is expected that Shareholders entitled to receive payments in respect of the proceeds of the redemption of the B shares will receive payment on or before 31 May 2022*), so you won't be able to immediately reinvest that actual cash.
