8oz self raising flour
8oz utterly butterly (not butter, it makes the cake too biscuity)
8oz sugar, I use normal not icing sugar
8oz finely chopped, skinned and cored apple , I prefer not too fine.
4 eggs.
Blend the fat and flour together by hand as if making a crumble mix.
Mix in the sugar, add 4 eggs, mix up together by hand, don't over mix gives better texture.
fold, that's FOLD in the apple into the mix.ture. Pour into greased cake tin.
Cut another small apple into about 12 segments, leave the skin on this apple. Bathe in lemon juice.
Arrange these segments around the top of the cake mix.
Preheat over 175 deg.
Cook, in middle of oven for 70 mins.
Check with a knife that all the mixture is cooked, should be no liquid on
knife when you pull it out of centre of cake. If liquid still on knife give it
another 10mins cooking time.
I like to use some of the cake as a pudding, served warm with a little red wine drizzled
over it and some Devon cream or yoghurt.
