Well let the fresh ingredients speak for themselves. Lemon or vinegar makes cod quite racy. Batter is lovely and salt a strong flavour too.
Covering things in spice to mask rotten meat and veg is ok and has even been brought to a fine art.
Nobody posh in the uk is going to be chucking chicken nuggets in a frier either.
At our peak we are the best fusion or creative chefs in the world but we are not afraid to keep it simple and joyous and not so insecure to reject other cultures peasant food like pasta or noodles or polenta, or potatoes even were native american. Pizza is cheese on toast with tomato sauce ffs.
Our veg is so good its nice just boiled.
