10's of 1000's of wells in similar type fields have various surface wing valves, isolation valves, diverter valves etc, along with diverter pipework, bypass pipework, which is not unique, much of it is standard type setup.
It is the same when a well test is done on a production well, it connects to the live, flowing well via a wing valve, and flow is diverted through and the original flow line shut off for flow to the test kit, and switched back once complete.
The pipework from the well to the plant will almost certainly be connected to a multi well manifold, with additional capped and valved input points, that can be utilized for diversion or for connection of another well for example.
As they had used well test pipework and almost certainly an additional separator during this period, it will also almost certainly have used one of the wing valves to do this, they can connect new pipework to the additional wing valve/s on the wellhead while flowing through the temporary, until it is all connected & tested in isolation.
This isn't some dreamed up sheite, it is extremely common and standard. So yes, they can flow while doing the work.
