I find the drinking sequence is very dependant on "Whos paying".

Welcome drinks of bubbles.. Most only have one of those...
keep the period between arrival and sitting down to a minimum allowing only enough time for a couple of beers.
Wine served : two bottles of a decent red (gigondas would be exceptable) Leave the bottles on the table for show..
Now serve copious bottle of Fitou (£7) telling guests that you are keeping to a Rhone theme.
Make sure the drivers / non drinkers have perrier available. They will be the only ones who remember..
Now a bottle of Sauternes with dessert (£12) acquired taste so most again one glass.
Finish off with a good strong peaty single malt (guests to sample first,, Most will decline after just the smelling)
allowing you to change yours to 18 year old Auchentoshan .. and your guests to your home brew
Remember as the night goes on, the booze gets cheaper.. They will remember to quality starting drinks and not the chugging ones...
