The difference is not that slender. on average 7.62 (or 308, (308 win is slightly higher pressure than 7.62 but otherwise identical)) is double the energy ftlbs at the muzzle of 5.56 (or 223 rem, slightly lower pressure than 5.56 but otherwise the same). and due to on the whole better BC, downrange too.
5.56 is much lighter to carry than 7.62, so supplies are easier to coordinate, and still very effective within 4-500 meters. hence the general move to that. However 762 is far better at longer ranges. (not by any means a 300 win, 50 bmg or 338 lapua or anything though.)
If you want ammunition consistency you load your own. Most competitors do, even i do, and im rubbish!
