With food increasingly becoming the next big issue , even bigger than climate change for several people, fermentable food is going to be the biggest balloon in the next bubble.
Even though fermentable food may only have a small market share to begin with, it may be the pin that may be capable of seeing off stratospheric high food prices, e.g. Remilk is going to establish a 50000 cow equivelant fermentation factory in Denmark, the total number of cows in Denmark is 566000, they will be producing a 10% of milk protein in the Danish market. Now I do not know how much production it takes to move markets,10% appears substantial to me.
The UK would require four of these factories to achieve 10%.
