Optibiotix, based in York, has created a sweetener that is calorie-free and, according to taste tests performed at Reading University, comes with none of the downsides of existing sugar substitutes. Stephen O’Hara, who heads the company, believes that its time has come. “If you can create a natural replacement for sugar, that’s a very big market,” he said.
His product works by using bacteria to create sweet fibres, which are not digested by the body and increase foods’ fibre content. He said that they are in negotiations to have it on the market within two years, and are one of a number of companies aiming to replace not just other sweeteners but sugar too.
